Lima-born chef/owner Miguel Aguilar has assembled a menu of Peruvian favorites with an International twist. He's been called a master of ceviche, taking cues from culinary traditions as diverse as Japan, Italy, Spain and China.
“Peruvian food is already a universe of flavors you can play with,” said Aguilar, a Slope resident. “It’s a melting pot. It’s unique, but at the same time, it embraces the whole world. There are no rules in Peruvian food.”
Executive Chef and creator of the Peruvian influenced menus at Cocoroco, Kion Lounge and Ceviche Bar, Chef Miguel has already made an impact on the New York City’s culinary scene. His experience ranges from Restaurant LULU in San Francisco, to Dos Caminos, Mesa Grill and Ono in the Gansevoort Hotel in NYC.
The Food Network show Chopped will feature Chef Miguel Aguilar, surfing, competing and of course, cooking, in an amazing show airing on Tuesday July 12 at 9 PM
